Ingredients

  • 5 ripe bananas
  • 6 free range / organic eggs
  • 6 pitted dates chopped finely
  • 2 tsp vanilla extract
  • 1/4 cup Coconut Culture organic coconut oil melted
  • 1/2 tsp ground cinnamon
  • 2 tsp gluten free baking powder
  • 1/2 cup Coconut Culture organic coconut flour
  • 1/4 cup chia seed (ground)

Instructions

  1. Preheat your oven to 150 C. (fan forced) 170 C ( no fan)
  2. Grind chia seeds until powder
  3. Then add dates, cinnamon and baking powder and blend
  4. Add remaining ingredients : bananas Coconut Culture oil, vanilla extract, eggs, Coconut Culture coconut flour and blend in food processor until creamy and well
  5. Rest for 10 minutes to allow the Coconut Culture coconut flour to expand.
  6. Pour batter into baking tin and Bake for 50 – 55 minutes ( a skewer inserted into the centre should come out dry).
